Chef Jacques Chibois invites you to sample simple yet elegant cuisine prepared with precision, all made that bit more personal with seasonal produce that allows local produce to shine. All of this provides scope for pleasure, taste, and sheer beauty. Alongside these sophisticated dishes, the head sommelier (winner of the Gault et Millau gold award in 2013, and the Philippe Faure-Brac award in 2014) offers a wine menu with over 1600 listings. This menu naturally showcases the very best of Provence, and it also features excellent vintages from other regions of France.
Wine tasting sessions are available, led by French, English and Japanese-speaking sommeliers.

Named a Chevalier de l’Ordre du Mérite et des Arts et des Lettres, winner of the Victoires des Chefs d’entreprises de la Côte d’Azur, and a Maître Restaurateur, it’s fair to say that Jacques Chibois is a man of many talents. Twice a day, the restaurant and its terrace become the stage for a perfectly orchestrated show where, depending on the season, you can enjoy one of his most famous recipes, such as frozen garden citrus fruits with Kristal caviar, pan-fried foie gras escalopes with artichoke cream, butterflied lobster with an orange pulp, olive oil and basil emulsion, a truffle dome with a warm artichoke and baby spinach salad, roast veal fillet with truffle potatoes, new wave Mediterranean bass, and Vacherin domed cake. 

You can also learn about the Chef’s favourite regional dishes in his books “La Provence comme on l’aime” (Provence How We Like It) and “Saveurs et parfums de l’huile d’Olive” (Flavours and Tastes of Olive Oil), both available in the hotel boutique.
